We are delighted to present Thomas Goelzer as Chef of the Month. Since joining La Brasserie Monkel, Thomas has flourished in the kitchen, bringing his creativity and expertise to bear. He revisits classic dishes, drawing inspiration from world cuisines and their flavors, while using local ingredients of exceptional quality. His passionate approach and the welcoming atmosphere of La Brasserie Monkel turn every meal into a memorable moment.
Before joining La Brasserie Monkel, Thomas perfected his art through a variety of culinary experiences. For him, this place is much more than just a restaurant: it's a second family where the team and the customers are cared for in equal measure. He carefully selects his products, such as veal from the Schuttrange farm, raised exclusively on mother's milk to guarantee incomparable tenderness and quality.

This grand premier cru, typical of Pinot Gris, is distinguished by its smoky, fruity nose, with aromas of dried fruit and honey. On the palate, it offers a round, complex attack with hints of caramel, followed by a long, harmonious finish. It marries perfectly with the subtle flavors of veal tartare, enhancing wild herbs and tender meat with a beautiful harmony of freshness and complexity.
