We are delighted to honor Joël Schaeffer as Chef of the Month. Since joining Bistro Quai in the summer of 2021, Joël has transformed the restaurant's kitchen. He revisits classic dishes using quality local ingredients. His passion for cooking, his love of wine, and the warm atmosphere of Bistro Quai make every meal a unique experience.
Joël Schaeffer has been cultivating his passion for cooking since childhood, working alongside his mother. After studying at the Diekirch Hotel School and training in France with Ducasse in Verdon and Champagne, he won the national pre-selection for the Bocuse d'Or competition in 2004, representing Luxembourg as the youngest participant.
As part of the Chef of the Month project, until the end of September 2024 you can enjoy the Chef's food and wine pairing: grilled octopus, fregola sarda, preserved lemon and cucumber pair with our Grand Premier Cru VIGNUM Riesling Grevenmacher Paradäis.
This local wine, gold medal winner at the Mondial des Vins Blancs 2024, stands out for its fine, complex peach and citrus aromas. Fresh on the palate, with good acidity and a fruity, mineral finish.
