We're pleased to present Rachel Rameau, talented chef at Restaurant De Pefferkaer, a place where local gourmet cuisine is served in a warm and relaxed atmosphere.
The restaurant was recently voted Restaurant de Terroir by Gault et Millau, and Rachel shares this adventure with her husband, Claude Rameau, who was also voted Sommelier of the Year 2020 by the guide. Together, they form a passionate duo and offer you an unforgettable culinary experience.
Autodidact and passionate about her art, Rachel Rameau defends a philosophy based on local and seasonal products, while respecting the cycles of Nature. With her husband, she cultivates a private garden where aromatic herbs and eatable flowers bloom, while working in partnership with local producers to guarantee quality ingredients.
For this year-end, Rachel proposes her creation “Souvenir d'une Tarte Tatin”, a dome of caramelized confit apple, chantilly and apples that perfectly reflects her know-how and creativity.
To enhance this dessert, her husband, Claude Rameau, selected our Straw Wine Gewürztraminer VIGNUM, awarded Wine of the Year 2024 by Gault et Millau.
This rare and refined wine is produced using an ancestral method: the grapes are dried on straw beds for several months, before being delicately pressed and slowly fermented. It reveals deep and elegant aromas offering a finest tasting experience.
